In a second of a three-part series with Snacking Essentials and California Walnuts, I created this a delicious Spiced Apple and Walnut Cake with a Crispy Crumb Topping.

And, it’s perfectly cosy for an autumnal Sunday afternoon.

Apple and Walnut is a classic combo, and I wanted to combine a cake with a deliciously crispy crumble topping, into a hearty, warming dessert.

Especially when served with creamy custard, oh yes!

The Wholefoods Walnuts pack from Snacking Essentials uses the best California Walnuts, which have a mild and creamy flavour, so sit perfectly with the apple flavour in this cake.

And nuts are a great addition to any recipe, they add crunch and delicious flavour.

And, walnuts are the only tree nut to contain a significant amount of the plant-based omega-3, alpha-linolenic acid, 2.7g/ 30g (approx. a handful), so they’re good for you too.

Spiced Apple and California Walnut Cake with Crispy Crumb Topping

Ingredients

For the topping

  • 100 g walnuts toasted and crushed a little
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
  • 2 tbsp maple syrup
  • 1 1/2 tbsp plain flour

For the cake

  • 200 g plain flour
  • 175 g walnuts
  • tsp baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 1 tbsp apple cider vinegar
  • 250 ml plant based milk
  • 1 tbsp veg oil
  • 7 tbsp caster sugar
  • 1 tbsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp all spice
  • Pinch cloves
  • 2 apples grated

For the topping

  • 1 apple sliced thinly

Instructions

  • Pre heat your oven to 180c
  • Grease a loose bottom cake tin with oil.

To make the crumb topping

  • Add all the ingredients together in a bowl. Set aside.

To make the cake

  • Add the walnuts to your food processor and blitz to a fine crumb.
  • Now add the remaining ingredients (apart from the apples) and blitz until you get a smooth batter and there are no lumps.
  • Now stir in the grated apples .
  • Spoon the batter into the cake tin, then top with the crumb topping and sliced apples.
  • Now bake for approx 40-45 minutes or until a skewer comes out clean.
  • Allow the cake to cool for 10-15 minutes until turning out.

  • I would really like to make this, but am confused by the ingredients list… it has three sections ‘for the topping’, ‘on top’ and ‘for the topping’? Which bit is for the top?
