Spiced Apple and California Walnut Cake with Crispy Crumb topping

In a second of a three-part series with Snacking Essentials and California Walnuts I created this delicious Spiced Apple and Walnut Cake with a Crispy Crumb Topping – perfectly cosy for an autumnal Sunday afternoon.

Apple and Walnut is a classic combo and I wanted to combine a cake with a deliciously crispy crumble topping – a hearty, warming dessert. Especially when served with creamy custard. 

The new Wholefoods Walnuts pack from Snacking Essentials use the best California Walnuts which have a mild and creamy flavour, so sit perfectly with the apple flavour in this cake.  

And nuts are a great addition to any recipe, they add crunch and delicious flavour, plus Walnuts are the only tree nut to contain a significant amount of the plant-based omega-3, alpha-linolenic acid (ALA), 2.7g/ 30g (approx. a handful) – so they’re good for you too.

  8-12 servings
  15 minutes preparation time
  1 hr cook time


For the topping; 

  • 100g walnuts toasted and crushed a little 
  • 1 tsp cinnamon 
  • 1/2 tsp sea salt 
  • 2 tbsp maple syrup  
  • 1 1/2 tbsp plain flour 

On top; 

  • 1 apple sliced thinly  

To make the cake 

  • 200g plain flour 
  • 175g walnuts  
  • 1½ tsp baking powder 
  • ½ tsp baking soda 
  • ½ tsp sea salt 
  • 1 tbsp apple cider vinegar 
  • 250ml plant based milk 
  • 1 tbsp veg oil  
  • 7 tbsp caster sugar  
  • 1 tbsp vanilla essence 
  • 1 tsp cinnamon 
  • 1 tsp all spice 
  • Pinch cloves  
  • 2 apples grated 

On top; 

  • 1 apple sliced thinly  


  1. Pre heat your oven to 180c 
  2. Grease a loose bottom cake tin with oil. 

To make the crumb topping;

  1. Add all the ingredients together in a bowl. Set aside. 

To make the cake; 

  1. Add the walnuts to your food processor and blitz to a fine crumb. 
  2. Now add the remaining ingredients (apart from the apples) and blitz until you  get a smooth batter and there are no lumps.  
  3. Now stir in the grated apples  
  4. Spoon the batter into the cake tin then top with the crumb topping and sliced apples. 
  5. Now bake for aprox 40-45 minutes or until a skewer comes out clean.  
  6. Allow the cake cool for 10-15 minutes until turning out.

    I would really like to make this, but am confused by the ingredients list… it has three sections ‘for the topping’, ‘on top’ and ‘for the topping’? Which bit is for the top?
