Spiced Apple and California Walnut Cake with Crispy Crumb Topping
Deliciously spiced apple and walnut cake with a crispy crumb - perfectly cosy for an autumnal Sunday afternoon treat with a cup of tea.

For the topping
- 100 g walnuts toasted and crushed a little
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 2 tbsp maple syrup
- 1 1/2 tbsp plain flour
For the cake
- 200 g plain flour
- 175 g walnuts
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp sea salt
- 1 tbsp apple cider vinegar
- 250 ml plant based milk
- 1 tbsp veg oil
- 7 tbsp caster sugar
- 1 tbsp vanilla extract
- 1 tsp cinnamon
- 1 tsp all spice
- Pinch cloves
- 2 apples grated
To make the crumb topping
To make the cake
Add the walnuts to your food processor and blitz to a fine crumb.
Now add the remaining ingredients (apart from the apples) and blitz until you get a smooth batter and there are no lumps.
Now stir in the grated apples .
Spoon the batter into the cake tin, then top with the crumb topping and sliced apples.
Now bake for approx 40-45 minutes or until a skewer comes out clean.
Allow the cake to cool for 10-15 minutes until turning out.
