Peanut Butter Banana Jam French Toast

This is a treat, fluffy banana French toast sandwiched with runny peanut butter and sweet jam.

I mean, that’s already super delicious, but I love to add lots of warm gooey berries on top, plus a little creamy yogurt. Just incredible.

The banana in the batter adds a lovely flavour and sweetness, and it’s wonderful with peanut butter and jam.

I created this as I thought it might be a brilliant Mother’s Day brunch, imagine walking up to this! My dream anyway.

You can mix up the flavour combinations, use any berries you fancy and skip the peanut butter and or jam.

It’s good enough as a dessert, so some creamy ice cream would be amazing as well with some chocolate sauce.

Peanut Butter Banana Jam French Toast

This fluffy banana French toast sandwiched with runny peanut butter and sweet jam is absolutely gorgeous! Lovely with lots of warm gooey berries on top.

Ingredients

  • 6 slices bread of choice–I like chunky white or sourdough
  • 375 ml plant based milk
  • 4 tablespoon maple syrup
  • 210 g self raising flour
  • 1 tsp baking powder
  • 1 tbsp cinnamon
  • Pinch of sea salt
  • 1 large ripe banana mashed
  • Coconut oil for frying

For the filling

  • Runny peanut butter
  • Jam of choice

Other toppings

  • Warm berries
  • Plant-based yogurt
  • Toasted nuts or seeds

Instructions

  • In a bowl, whisk together the milk, maple syrup, flour, baking powder, cinnamon, and salt.
  • Mash up the banana and add that to the mix. Stir well.
  • Pour some of the batter into a shallow dish (with sides), now add a slice of bread and pour more mixture over the bread, then lift or flip the bread over to make sure both sides are coated.
  • Heat a drizzle of coconut oil in a large frying pan over medium heat. When the pan is hot, add the bread slices and cook for a few minutes per side, until golden brown. Repeat.

To serve

  • For a stack of French toast–place the first slice in a plate, spread over peanut butter and jam and place the next slice on top. Repeat.
  • Top the third slice with warm berries and yogurt and a sprinkle of nuts or seeds.
  • Or you can just serve 1 slice topped with everything!
