Overnight Oats with Banana & Coconut

I have so many oaty breakfast recipes because until recently I have been VERY dedicated to having oats for breakfast everyday. I love them because there are filling, comforting, taste delicious plus you can add all sorts of extra healthy additions.

I’m a particular fan of soaking the night before as the oats expand and you get a more porridgey texture (and it seems like you’re  getting more!)

This recipe is really simple, vegan, gluten free, filling and tastes amazing.

I'd love to know if you made this recipe.

  1 servings
  5 minutes preparation time
  None cook time

  • 1/2 cup gluten free oats
  • 1 cup milk (almond, soya, coconut etc)
  • 2 tbsp coconut yogurt
  • 1 tsp chia seeds
  • 1 tbsp sunflower seeds
  • 1/4 banana mashed
  • Ideas for toppings;
  • Raspberry compote
  • Handful of nuts & seeds

  1. Pop your oats, coconut yogurt, chia, banana & seeds in a bowl and add the milk (almond in my case), give it a stir and cover with cling film
  2. In the morning take the now expanded oats out of the fridge, add a little more milk to loosen.
  3. Make the compote and sprinkle on the nuts and seeds
  4. Enjoy!
