I’m never sure whether to post oat or porridge recipes on my website, as I feel like many people already have their own favourite recipe already?

However, this one is super-special.

Beautifully spiced and warming oats topped with sticky caramelised roast pears. Perfect for autumn and winter when you want something warm and comforting.

As this makes quite a big portion, you can store any leftovers in the fridge and eat them cold topped with some more plant-based milk. Delicious!

The pears can also be revived by heating in a frying pan with a splash of maple syrup and are absolutely gorgeous eaten on toast with some peanut butter.

Spiced Almond Porridge with Caramelised Pears

Ingredients

  • 4 pears sliced in half through the middle
  • Splash of neutral oil
  • Splash maple syrup
  • 1 tsp coconut sugar

For the oats

  • 75 g oats of choice
  • 2 tbsp ground almonds
  • 1 tsp cinnamon
  • 1/2 tsp ground cardamon
  • 1 tsp allspice
  • 1 tsp vanilla extract
  • 1/2 tsp almond essence
  • 500 ml almond milk

For the toppings

  • Coconut yogurt
  • Crushed nuts
  • Maple syrup

Instructions

To make the pears

  • Pre heat your oven to 180c
  • Add the pears to a baking tray, then drizzle with oil, maple and coconut sugar.
  • Bake for approx 25-30 minutes until soft and caramelised.
  • Set aside.

To make the porridge

  • Add the oats, milk and spices to a small saucepan, simmer on a low heat, stirring continuously for a few minutes until the porridge has absorbed the milk but is not too dry.
  • Turn off the heat and stir in more plant-based milk if needed to loosen.
  • Spoon into a bowl and top with caramelised pears, coconut yogurt and nuts. Plus a splash of maple syrup.
