I’m thrilled to have teamed up with one of my favourite brands, Snacking Essentials.

I focused on their wholesome Californian Walnuts and created three delicious recipes incorporating them to show how versatile walnuts can be.

The first is this incredible Chocolate and California Walnut cake with a ganache topping!

It’s absolutely delicious and made with wonderful California Walnuts.

The cake has a deep chocolatey flavour and is packed with lovely California Walnuts, then the ganache topping, oh my goodness it’s so, so good!

Rich Chocolate Walnut cake with Ganache Topping

An incredible chocolate and walnut cake with a ganache topping - a deep chocolatey flavour and it’s packed with lovely crunchy walnuts

Ingredients

For the cake batter

  • Dry ingredients
  • 275 g white plain flour
  • 100 g raw cacao
  • 275 g caster sugar
  • 1 tbsp baking powder
  • Pinch of sea salt

The wet ingredients

  • 350 ml plant based milk
  • 200 ml vegetable oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp vanilla extract
  • 80 g walnuts broken up

For the chocolate ganache

  • 200 g chopped dark chocolate
  • 250 ml coconut cream
  • A handful of walnuts

Instructions

  • Pre heat your oven to 180c
  • Mix the dry ingredients in a large bowl.
  • Now add the wet ingredients and stir to combine well to create a smooth batter.
  • Stir in the walnuts.
  • Oil a round baking tin and pour the batter into it.
  • Bake for approx 45 minutes or until a toothpick comes out clean. Allow to cool on a rack.
  • Meanwhile, bring the coconut cream to a boil in a small saucepan, then take it off in the heat. Stir in the chopped chocolate until it’s all melted and you’re left with a thick chocolate cream.
  • When the cake has cooled top with the ganache.
  • Top with some walnuts.
