All the flavours of a beautiful middle eastern dessert–pistachios, dates and ground almonds.

Some of my all-time favourites, and the bars turn a gorgeous green colour from the pistachios–pretty special.

Like many of my easy bar recipes, they are incredibly easy to make.

It’s just a matter of blitzing all the ingredients in a food processor, and then baking.

But I think this is my favourite to date, they are perfect for breakfast, snacks or a delicious dessert with some banana nice cream or coconut yogurt.

Sweetened with banana and dates, making them sweet and squidgy, I’m in love!

Pistachio, Date & Almond Bars (Gluten Free)

A beautiful combination of middle eastern flavours - pistachios, dates and ground almonds in squidgy bar form. One of my favourite sweet treats.

Ingredients

  • 150 g pistachios shelled
  • 300 g Medjool dates pitted or dates soaked to soften for a few hrs
  • 2 small ripe bananas
  • 3 tbsp tahini
  • 1 tsp vanilla extact
  • 1 tsp cardamom
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • Pinch sea salt flakes
  • 1 tsp baking powder
  • 100 g ground almonds
  • 50 g porridge oats–gluten-free
  • 3 tbsp raw cacao nibs
  • 2 tbsp chopped nuts

For the toppings

  • Cacao nibs
  • Chopped nuts
  • Sesame seeds

Instructions

  • Pre heat you oven to 180c
  • Add the pistachios to your food processor and blitz to a fine crumb. Now add the dates, banana & tahini into your food processor or high-speed blender and blitz until you get a paste.
  • Next, add in the vanilla, cinnamon, mixed spice, salt, baking powder. Blitz again, then add in the oats and ground almonds and pulse so that everything is combined.
  • Finally, add in the cacao nips and chopped nuts and pulse a couple of times to mix through.
  • Grease your baking tray with a little coconut oil, then add the mix to the bottom. Press into the corners, Top with more nuts, seeds and cacao nips–press in a little.
  • And then bake for approx 18 minutes.
  • Allow to cool a little before eating–if you can!

    Thank you, really tasty. Like a yummy soft fudge but without being too sweet.

    It met with the approval of my husband and friends. I would definitely make it again!!

    PS I used one largish banana rather that 2 small, don’t know that would have made a difference for your other correspondent

    Made these with choc chips they are delicious satisfying and tasty , swapped tahini for smooth peanut butter

  • Not very good. All I taste is banana and a little tiny bit of spice. Had to bake way longer than 18 minutes too. I wouldn’t make this again.
