The team at Pura kindly sent me some of their lovely products to challenge me to create a healthy and easy recipe.

I’m always up for a challenge and as you know I’m a huge fun of both quick and Asian inspired flavours, so I made a veggie stir-fry with a peanut sauce with green herby rice.

I think it ticks all the boxes.

A stir-fry is a brilliant quick dinner. You can whip them up with any veg you have in your fridge, and they’re also one of the best ways of incorporating lots of vegetables into your meal.

I’ve used some of my favourites here, cauliflower, broccoli, and sugar snaps which all keep a gorgeous crunch, but old favourites like carrots, peppers, and mushrooms are also delicious.

What can I say about this peanut sauce.

Well, it’s super peanutty, so I’m in heaven.

And it’s super versatile, it’s brilliant as a sauce for stir-fry, but it’s also a delicious marinade for tofu or used as a dipping sauce.

I also love adding extra veggies and herbs to rice, quinoa etc, so that’s exactly what I did here and added big handfuls of spinach, coriander, and mint to my rice.

I think it complements the stir-fry perfectly.

I used Pura Coconut Oil Blend Spray to cook my veg, and it’s a lovely blend of coconut, sunflower, and rapeseed oils. In a convenient spray and totally flavour free, which is great if you don’t want the oil to flavour your dishes.

Pura Coconut Oil Blend is also high in Omega-3, it is lower in saturated fat than traditional coconut oil.

It’s brilliant for cooking pancakes, as you can just use a quick spray to coat the bottom of the pan, rather than using lots of oil and getting greasy rather than fluffy pancakes. And it’s flavour free; happy days!

The Pura Coconut Blend range includes a liquid blend and a spray. The Pura Coconut Oil Blend is combined with Rapeseed and Sunflower oil. The liquid consistency is perfect for roasting, basting and frying. Pura Coconut Oil Liquid Blend Spray offers portion control, making it a great choice for stir-frying and basting.

Ultimate Veggie Stir Fry with Peanut Sauce and Green Herby Rice using Pura Coconut Oil

Ingredients

For the peanut Satay dressing

  • 2 tbsp peanut butter
  • Juice 1 lime
  • 1 tbsp rice wine vinegar
  • 1 garlic clove crushed
  • 1 tbsp tamari
  • 1 tbsp sesame oil
  • 1 tsp maple syrup
  • 1 knob ginger
  • 2 tbsp water

For the herby rice

  • 1 cup brown rice
  • 2 handfuls of spinach
  • 1 handful coriander–including the stalks
  • 1 handful mint
  • Veg stock
  • Juice 1/2 lemon
  • 1/2 tsp salt
  • Twist black pepper

For the stir-fry

  • 4 sprays Pura Coconut Oil Blend Spray
  • 1 onion roughly chopped
  • 3 cloves garlic sliced
  • 70 g baby corn
  • 1/2 small cauliflower
  • 1/4 head broccoli
  • 80 h sugar snaps
  • 1/2 courgette sliced
  • 2 tbsp coconut yogurt/milk/cream

Instructions

To make the satay sauce

  • Add the ingredients to a mason jar and shake well to combine

To cook the rice

  • Cook the rice in veg stock for added flavour.
  • Add the herbs to a blender or food processor and blitz quickly until you the greens are roughly chopped. Add to the pan with the cooked rice and stir well.
  • Finally, squeeze in the lemon and season.

To make the stir-fry

  • Heat a large frying pan to medium, then spray with oil. Add the onion and fry for 7-8 minutes until soft and browning. Add the garlic and all the veg. Fry for 3-4 minutes until the veg is cooked but still crunchy, then add the peanut sauce, stir to combine and cook for a further minute.
  • Finally, add in the coconut yogurt, milk or cream and stir well.
