I made this as a healthy and delicious snack at the weekend so I could take a batch with me to Wales on a huge run/walk along the Welsh coastal Path between Aberdovey and Barmouth. It was 21 miles in total and stunningly beautiful – starting on the windswept beach, then ascending into patchwork hills and valleys.
Exhausting but completely invigorating, and these little blondies were the perfect fuel along the way.
This recipe is a lovely combination of flavours (some of my favourites) – Sweet apple and ground almonds which marries perfectly. Of course I added the special ingredient chickpeas which makes them squidgy and adds loads of plant based protein.
Its a super simple recipe and can be whipped up in a food processor in literally minutes.
