I made this as a healthy and delicious snack at the weekend so I could take a batch with me to Wales on a huge run/walk along the Welsh coastal path between Aberdovey and Barmouth.

It was 21 miles in total and stunningly beautifulโ€“starting on the windswept beach, then ascending into patchwork hills and valleys.

Exhausting but completely invigorating, and these little blondies were the perfect fuel along the way.

This recipe combines lovely flavours (some of my favourites)โ€“Sweet apple and ground almonds which marry perfectly. Of course I added the special ingredient chickpeas which makes them squidgy and adds loads of plant-based protein.

Itโ€™s a super simple recipe and can be whipped up in a food processor in literally minutes.

I hope you love it. Niki xxx.
