Apple Almond blondies

I made this as a healthy and delicious snack at the weekend so I could take a batch with me to Wales on a huge run/walk along the Welsh coastal Path between Aberdovey and Barmouth. It was 21 miles in total and stunningly beautiful – starting on the windswept beach, then ascending into patchwork hills and valleys.

Exhausting but completely invigorating, and these little blondies were the perfect fuel along the way.

This recipe is a lovely combination of flavours (some of my favourites) – Sweet apple and ground almonds which marries perfectly. Of course I added the special ingredient chickpeas which makes them squidgy and adds loads of plant based protein.

Its a super simple recipe and can be whipped up in a food processor in literally minutes.

  12 servings

  25 minutes cook time


  • 230g cooked chickpeas rinsed & drained 
  • 100g ground almonds 
  • 150g self raising flour
  • 7 tbsp brown sugar 
  • 1 tsp baking powder 
  • Pinch sea salt
  • 2 tsp almond extract 
  • 4 tbsp maple syrup 
  • 100g light olive oil 
  • 1 tsp apple cider vinegar 
  • 50ml plant based milk 
  • 2 grated apples 


  • 2 apples sliced
  • Brown sugar


  1. Pre heat the oven to 180C and line a medium baking tray with parchment paper. 
  2. Add all the ingredients apart from the apple to a food processor and mix until smooth & creamy. 
  3. Now add the grated apples and blitz again briefly to combine.
  4. Then spoon into the baking tray, smooth out so that it’s even and then top with the apple slices
  5. Bake for 25-30 minutes. Allow to cool completelybefore removing from the tray and slicing. Enjoy!
