I made this as a healthy and delicious snack at the weekend, so I could take a batch with me to Wales on a huge run/walk along the Welsh coastal path between Aberdovey and Barmouth.

It was 21 miles (ca. 34 km) in total and stunningly beautiful – starting on the windswept beach, then ascending into patchwork hills and valleys.

Exhausting but completely invigorating, and these little blondies were the perfect fuel along the way.

This recipe combines lovely flavours (some of my favourites) – sweet apple and ground almonds, which marry perfectly. Of course, I added the special ingredient chickpeas, which makes them squidgy and adds loads of plant-based protein.

It’s a super simple recipe and can be whipped up in a food processor in literally minutes.

Apple Almond blondies

Sweet apple almond blondies - with ground almonds and a special ingredient -chickpeas, which makes them squidgy and adds loads of plant-based protein.

Ingredients

  • 230 g cooked chickpeas rinsed & drained
  • 100 g ground almonds
  • 150 g self raising flour
  • 7 tbsp brown sugar
  • 1 tsp baking powder
  • Pinch sea salt
  • 2 tsp almond extract
  • 4 tbsp maple syrup
  • 100 g light olive oil
  • 1 tsp apple cider vinegar
  • 50 ml plant based milk
  • 2 grated apples

For the toppings

  • 2 apples sliced
  • Brown sugar

Instructions

  • Pre heat the oven to 180C and line a medium baking tray with parchment paper.
  • Add all the ingredients apart from the apple to a food processor and mix until smooth & creamy.
  • Now add the grated apples and blitz again briefly to combine.
  • Then spoon into the baking tray, smooth out so that it’s even, and then top with the apple slices.
  • Bake for 25-30 minutes. Allow to cool completely before removing from the tray and slicing. Enjoy!
