Spiced whole cauliflower with smokey tomatoes and salsa

Spiced whole cauliflower with smokey tomatoes and salsa – a bit of a show stopper of a dish. Perfectly cooked roast cauliflower – soft on the inside and crispy on the outside. Served on a bed of a smokey tomato sauce and fresh and zingy salsa.

What to serve this with?I would recommend crispy crushed potatoes or flatbread. It’s also delicious with dips and a crunchy slaw.

  2-4 servings
  15 minutes preparation time
  1 hr cook time


For the roast cauliflower;

  • 1 medium cauliflower
  • 1 tbsp smoked paprika
  • 2 tbsp olive oil

Tomato sauce;

  • 1 red onion sliced 
  • 1 tbsp olive oil 
  • 3 cloves garlic sliced 
  • 1 tbsp smoked paprika 
  • 1/2 tsp chili powder  or chipotle powder
  • 1 tsp ground cumin 
  • 1 tsp oregano 
  • 1 tin chopped tomatoes
  • 2 tbsp sun dried tomato paste
  • Sea salt and black pepper
  • 15g fresh mint shredded

For the salsa;

  • 150g cherry tomatoes chopped
  • Fresh coriander & mint shredded
  • Juice 1 Lime 
  • 1 tbsp extra virgin olive oil
  • Pinch sea salt flakes and chilli flakes


To cook the cauliflower;

  1. Take the leaves and base off the cauliflower and score a cross in the base with a knife.
  2. Add the cauliflower upside down to a large pan of boiling water. Make sure it’s submerged, cover with a lid and boil for aprox 7 minutes – until just tender.
  3. Drain and pat dry, then add it to a lined small baking tray. 
  4. Rub with the smoked paprika  and sea salt. 
  5. Drizzle all over with olive oil. 
  6. Preheat oven to 180c
  7. Bake for 45 minutes .The cauliflower should be a little crispy on the outside and soft inside.

To make the sauce;

  1. In the meantime – in a medium fry the onion for 8 minutes with the olive oil.
  2. Add the garlic and spices and stir to combine.
  3. Add the chopped tomatoes and sun dried tomato paste and simmer for 6 minutes until the tomatoes have started to break down
  4. Season well and stir in the fresh mint.

To make the salsa;

  1. Add all the ingredients to a bowl and mix to combine.

To serve;

  1. Spread the sauce on a large serving bowl, add the roast cauliflower.
  2. Top with the salsa.
