Sweet Potato, Quinoa & Bean Chilli with British Quinoa Lemon & Herb

Ingredients
1onion chopped
2tbspolive oil
4clovesgarlic sliced
1tspcumin seeds
1tspsmoked paprika
1/2tspcinnamon
1/2oregano
1/2tspsmoked garlic powderoptional
2tsprose harissa paste
5ripe tomatoes chopped
2cups/500ml veg stock
1courgette chopped into cubes
1sweet potatoes peeled and chopped into cubes
1organic peppers chopped
1can butter beans
1can black beans
1pack British Quinoa lemon and herb
1/2tspsea salt
Black pepper
1tspmaple syrup
Juice 1/2 lime
For the toppings
Coriander
1avocado sliced
Instructions
Add the oil to your saucepan on a medium heat, then add in the onion. Fry for 8-10 minutes until soft. Add in the garlic and spices and cook for a further few minutes, then add in the veg to your pan and fry for 2-3 minutes.
Next, add the harissa paste and stir to combine.
Then add in the veg, stock and simmer for 10 minutes. Covered.
Add the beans and quinoa, stir and cook for another 15 minutes.
Season with salt and pepper, then add the maple syrup and lime.
