Cauliflower Steak with Lime and Coriander Dressing
Delicious cauliflower steak topped with an amazing dressing - sharp lime, vinegar and mustard, olive oil and garlic, capers and coriander. Simple but fantastic.

1 cauliflower sliced into chunky steaks–I used Romanesco Olive oil for rubbing on to the steaks Juice and zest 1 lime 2 tbsp capers 2 tbsp olive oil 2 cloves garlic sliced 2 tbsp white wine vinegar 1 tsp wholegrain mustard 2 tbsp coriander chopped Pinch of pepper Pink salt to taste 1/2 tsp maple syrup Chilli flakes–optional
Heat the oven to a medium heat.
Rub a little olive oil over the cauliflower and place on a baking tray. Pop in the oven and bake for approx 45-50 minutes, turning occasionally.
Add all the dressing ingredients to a jar, replace the lid and shake to combine.
Pour the dressing over the cauliflower to serve.
Great served with hummus & sourdough.
