4tablespoonmaple syrup
210gself raising flour
1tspbaking powder
1tbspcinnamon
Pinchof sea salt
1large ripe banana mashed
Coconut oil for frying
For the filling
Runny peanut butter
Jam of choice
Other toppings
Warm berries
Plant-based yogurt
Toasted nuts or seeds
Instructions
In a bowl, whisk together the milk, maple syrup, flour, baking powder, cinnamon, and salt.
Mash up the banana and add that to the mix. Stir well.
Pour some of the batter into a shallow dish (with sides), now add a slice of bread and pour more mixture over the bread, then lift or flip the bread over to make sure both sides are coated.
Heat a drizzle of coconut oil in a large frying pan over medium heat. When the pan is hot, add the bread slices and cook for a few minutes per side, until golden brown. Repeat.
To serve
For a stack of French toast–place the first slice in a plate, spread over peanut butter and jam and place the next slice on top. Repeat.
Top the third slice with warm berries and yogurt and a sprinkle of nuts or seeds.
Or you can just serve 1 slice topped with everything!
