Ultimate Veggie Stir Fry with Peanut Sauce and Green Herby Rice using Pura Coconut Oil
A quick and delicious stir-fry - loads of vegetables, an amazing peanut sauce and herby rice - a brilliant quick dinner as you can whip them up with any veg.

Ingredients
For the peanut Satay dressing
2tbsppeanut butter
Juice 1 lime
1tbsprice wine vinegar
1garlic clove crushed
1tbsptamari
1tbspsesame oil
1tspmaple syrup
1knob ginger
2tbspwater
For the herby rice
1cupbrown rice
2handfuls of spinach
1handful coriander–including the stalks
1handful mint
Veg stock
Juice 1/2 lemon
1/2tspsalt
Twist black pepper
For the stir-fry
4sprays Pura Coconut Oil Blend Spray
1onion roughly chopped
3clovesgarlic sliced
70gbaby corn
1/2small cauliflower
1/4head broccoli
80h sugar snaps
1/2courgette sliced
2tbspcoconut yogurt/milk/cream
Instructions
To make the satay sauce
Add the ingredients to a mason jar and shake well to combine
To cook the rice
Cook the rice in veg stock for added flavour.
Add the herbs to a blender or food processor and blitz quickly until you the greens are roughly chopped. Add to the pan with the cooked rice and stir well.
Finally, squeeze in the lemon and season.
To make the stir-fry
Heat a large frying pan to medium, then spray with oil. Add the onion and fry for 7-8 minutes until soft and browning. Add the garlic and all the veg. Fry for 3-4 minutes until the veg is cooked but still crunchy, then add the peanut sauce, stir to combine and cook for a further minute.
Finally, add in the coconut yogurt, milk or cream and stir well.
