This is my second recipe with the wonderful Doves Farm–Spiced caramelised pear and fig pancakes using their fantastic Organic Stoneground Wholemeal Buckwheat Flour.

Doves Farm is encouraging people to bake organic for Organic September and I thought these simple and seasonal pancakes would fit the bill.

Doves Farm’s Organic Stoneground Wholemeal Buckwheat Flour is an absolute staple in my house and recipes–I’m sure you’ve seen all my buckwheat flour recipes! I first discovered it many years ago, and it really was a game changer. I absolutely adore its slightly nutty flavour and it is also nutritious.

My spiced caramelised pear and fig pancakes are delicious–I sweetened the pancakes a little with maple and some lovely warming spices. Served with sticky cinnamon maple roast pears, fresh figs, creamy yogurt, toasted walnuts and a good drizzle of maple syrup. So so good!

This recipe makes 8 so is great for making at the weekend for your family.

Spiced Caramelised Pear and Fig Buckwheat Pancakes

These delicious spiced caramelised pear and fig pancakes are such a gorgeous brunch or special breakfast dish. You’ll love them!

Ingredients

For the pancakes

  • 200 g Doves Farm Organic Stoneground Wholemeal Buckwheat
  • 1/2 teaspoon cinnamon
  • 1/2 tsp all spice
  • Pinch cloves
  • 1 tsp baking powder
  • 300 ml almond milk or plant based of choice
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • Oil for frying if needed

For the caramelised pears

  • 3 pears sliced
  • 1/2 tsp cinnamon
  • 2 tbsp maple syrup
  • 2 figs chopped

For the other toppings

  • Plant-based yogurt
  • Maple syrup
  • Toasted walnuts

Instructions

To make the caramelised pears

  • Pre heat your oven to 180c.
  • Add the pears to a baking tray, then drizzle with maple and cinnamon. Toss to combine.
  • Bake for approx 25-30 minutes until soft and caramelised.
  • Set aside.

To make the pancakes

  • Add the dry ingredients to bowl and stir to combine, then add the wet and mix thoroughly to combine and form a thick batter.
  • Spoon a dessert soon the mixture into a good nonstick pan and fry for 1-2 minutes until the underside is firm. See little bubbles forming on top. Carefully flip the pancakes and then cook for another minute until the pancakes are cooked through and slightly golden.
  • Repeat with all the mixture and set aside on a plate.

To serve

  • Top the pancakes with the caramelised pears, figs, yogurt, toasted walnuts and a drizzle of maple syrup.
