Seasonal Squash: 5 Top Recipes

A little fun fact for you here – I grew up in the countryside. I remember foresting for local berries and mushrooms with my friends and family and this love of picking and eating local and seasonal ingredients is something I hold close to my heart. It reminds me of home and just makes each meal all that more exciting. There is something so familiar about eating local produce and utilising the yield of what mother nature has to offer! Sometimes it means you have to get a little creative with your ingredients, but that just makes the dish taste all that much tastier!!

We are finally into October can you believe just how fast this year is going? But I don’t mind. I love the Autumn. It brings with it an air of longing for warming bowls of soups and stews and one of my favourite ingredients – the squash. This super versatile ingredient is perfect for a variety of dishes and I thought I would show you my five most popular squash dishes currently on the blog. Let me know what one is your favourite!

Roast Squash with creamy Hummus & Walnut Harissa dip

I’ve used a Kabocha squash in this recipe, but it works for all kinds, so use whatever squash you have to hand. This simple dish is packed full of flavour and will quickly become one of your go-to’s. The squash is gently roasted and served with a creamy home-made hummus and a toasted walnut harissa dip. Simple. Easy. Delicious.

Roast squash & carrots with peanut dressing & zingy herbs

This dish embodies the exact types of dishes I love to eat. A simple roasted squash which enhances its natural sweet flavour then layered with dressings and topping to create multiple textures, flavours and bring the whole thing to life. This creamy peanut sauce is finished with some zingy herbs and citrus for a punch of flavour and finally topped with some toasted sesame seeds and shaved cucumber. 

Christmas Chestnut & Squash Tart

With the arrival of the winter squash comes the inevitable Christmas festivities and this dish is an absolute show-stopper for Christmas Lunch or Boxing Day! Combining soft and slightly charred squash slices on top of a walnut and chestnut crumble-based tart for a delicious meal everyone can enjoy! 

Squash tagine with cauliflower rice and herby tahini dressing

Going a little bit different with this dish as we explore the cuisine of North Africa. I’ve combined all the sweet and spicy flavours together which creates this delicious and beautifully complex and fragrant dish which you just cannot miss. My squash tagine is created with chickpeas, sweet apricots and lots of fresh spices and herbs – finally finished with a super green and herby tahini dressing and served alongside cauliflower rice for the perfect fall dinner. 

Lemony Butternut Squash Risotto 

Finally, we have my favourite way to use squash – in a risotto. It’s wonderfully rich and earthy flavour just sings in a bowl of this lemon rice. And do not fear, a vegan risotto is still full of flavour, regardless of the lack of butter and cheese. I slow-cook the onions, garlic and rosemary and utilise the creaminess from the squashes flesh to mimic the traditional and pour over a large amount of nutritional yeast for that familiar nutty and cheese flavour.
