My February Was Fuelled By These Sweet Potato Recipes

I feel like we need to start this with a little bit of good news – Did you know that we have already passed the halfway mark between Winter and Summer? That means that longer and warmer days are ahead; that’s all something we can take solace in as we continue to navigate through these difficult times. I know things still feel a little lost right now, but we are finally starting to see hope and we are continuing to see the small acts of kindness from the general public that just exudes love. And of course – last month was the month of love – so I wanted to start with some things that I loved last month. I was slathering Oatgurt Greek Style Yoghurt on pretty much everything. I managed to get outside and enjoy the wonderful wintery snow scenes atop Shropshire Hill and when I wasn’t outside in the freezing cold, I was hibernating away and binge-watching Bridgerton and American Horror Story on Netflix all while flicking through this gorgeous How to Photograph Food book by the wonderful Beata Lubas – that is giving me all the inspo on some super-secret projects I’m currently working on behind the scenes! 

Make, Bake and Craft:

Speaking of inspiration – last month had some amazing seasonal produce – including one of my favourites… the Sweet Potato. I always make sure to stock up on these beautiful tubers and cook my Loaded Indian Spiced Baked Sweet Potatoes when they’re fresh and ripe and when they start to look a little sad, turn them into my Spiced Sweet Potato and Carrot Soup. Did You Miss These? 

I got the inspiration for my Indian Sweet Potatoes from my Savoury Baked Potatoes I cooked last month and paired them with a Smokey Bean and Creamy Slaw – which is pretty much my theme dish to 2021 already – I must have eaten it at least twice a week! And you all seemed to love it too. It was one of the top read recipes on the blog last month – along with an influx of views on my simple flatbread masterclass, as the nation turned back to baking, but looking for something quick and easy this time round, I mean who really has time to keep feeding their sourdough starter?! These delicious flatbreads can be made in under five minutes and are the perfect addition to a wide range of dishes from warming curries and stews or dipping into homemade hummus.
