Interview with the amazing Katie from Chocolate Covered Katie

I’ve got a very special treat for you today – I was lucky enough to interview the amazing Katie – founder of the successful blog Chocolate Covered Katie and best selling cook book author. Katie creates the most deliciously tempting healthy desserts and treats, is an inspiring food blogger and just a super lovely lady.

In my interview Katie tells us about how she stays healthy, her favourite recipes, styling tips and whats next for her!  But the burning question is – Does Katie really eat chocolate everyday??

What does healthy eating mean to you?

My daily diet is packed with veggies, fruits, and leafy greens… but I also eat chocolate at least twice a day. I don’t believe in deprivation diets. Aside from the multitude of studies that link deprivation with binge eating later on, nourishment is also so much more than calories and fat grams. Every time you eat, you are not just feeding your body but also your mind and soul. Really enjoying and paying attention to what we’re consuming can boost our happiness and thus our quality of life overall. There’s no medal for the person who eats the “cleanest” in this life, so we should really savor our food, being grateful—with each bite—for the experience. 

What’s your favourite recipe and why?

Brownies – I love rich, dark chocolate desserts and will always choose brownies over all other types of dessert. If I have to choose a favorite from my website, it might be the Ultimate Unbaked Brownies.


Do you have a secret you can tell  people about  how you make your recipe photos look so amazingly delicious?

I have a ton of maybe-not-quite-so-orthodox photography tricks, such as using tin foil to add shine or using a spray bottle to make food really glisten. All of my tricks are edible though – no shaving cream for whipped cream or motor oil for syrup. (Seriously, people really do that…)

 Can you tell me what the best and hardest thing is about being a blogger?

The hardest part is keeping up with hundreds of new emails and comments each day and not being able to respond to every single one. The fact that people all around the world are actually making the recipes I’m posting is the most fantastic feeling and by far my favorite part of blogging.   

What’s next for Chocolate Covered Katie?

I’m working on a huge redesign of the site, a second cookbook, and videos. There are so many things I want to do, and I wish there were more time in the day.
