Cauliflower Steak with Lime and Coriander Dressing

Delicious cauliflower steak topped with an amazing dressing – sharp lime, vinegar and mustard, olive oil and garlic, capers and coriander. Simple but fantastic.

This delicious recipe came to me the other day.

I’m not sure where from, but I thought I wanted to create a new roast cauliflower recipe. I’m sure I’ve said many times before, but I love roasted cauliflower with its crispy charred outside and soft centre.

I usually roast it in chunks, but I thought it would be nice to try roasting it in steaks for a change. They look great and I like the idea of a cauliflower steak.

So originally I thought I’d make a tandoori dressing (which I’m still planning to do) when I remembered the amazing Delia Smith dressing I used to make regularly to pour over haloumi and thought it would be the perfect dressing for roast cauliflower.

And it was! I’m thrilled with this recipe–you’ve got to try it!

This dressing is so good. It has all the flavours I love in a dressing; sharp lime, vinegar and mustard, olive oil and garlic, capers and coriander.

I roasted one small cauliflower and ate it all to myself, but this would also be great as part of a mezze with hummus, pitta’s and lots of salads.

Cauliflower Steak with Lime and Coriander Dressing

Cook time: 50 minutes

Ingredients

  • 1 cauliflower sliced into chunky steaks–I used Romanesco
  • Olive oil for rubbing on to the steaks
  • Juice and zest 1 lime
  • 2 tbsp capers
  • 2 tbsp olive oil
  • 2 cloves garlic sliced
  • 2 tbsp white wine vinegar
  • 1 tsp wholegrain mustard
  • 2 tbsp coriander chopped
  • Pinch of pepper
  • Pink salt to taste
  • 1/2 tsp maple syrup
  • Chilli flakes–optional

Instructions

  • Heat the oven to a medium heat.
  • Rub a little olive oil over the cauliflower and place on a baking tray. Pop in the oven and bake for approx 45-50 minutes, turning occasionally.
  • Add all the dressing ingredients to a jar, replace the lid and shake to combine.
  • Pour the dressing over the cauliflower to serve.
  • Great served with hummus & sourdough.
