Banana Porridge with Blueberry Compote and Crushed Nuts

You cant beat porridge on a cold winter’s morning and this banana porridge is so good, sweet, sticky and satisfying. I think that cooking the banana with the oats intensifies the delicious banana flavour and works so well with the rich and fruity blueberry compote.

The blueberry compote is really easy to make, I whipped it up while my porridge was cooking (tip – the compote is also delicious with coconut yogurt or as a topping for my banana ice-cream!).

I always like to add a bit of crunch (and protein) to my porridge so I topped it off with crushed hazelnuts.

I'd love to know if you made this recipe.

  1 servings
  5 minutes preparation time
  10 minutes cook time

  • 1/2 cup of blueberries
  • 1 tsp agave
  • Squeeze lemon
  • 1/3 cup oats
  • I smashed banana
  • 1 tsp all spice
  • 1/2 cup almond milk

  1. Pop the oats, almond milk, all spice and smashed banana in a saucepan and heat to a gentle simmer. The porridge will only take a few minutes until it has absorbed all the liquid and becomes sticky and thick. Add a little more almond milk if you like your porridge a bit looser.
  2. In another saucepan add the blueberries, agave and a little water to a saucepan and heat on a low heat for aprox 2/3 minutes until the blueberries start to go melt down. I like the blueberries to be only partly squishy. Finally add a squeeze of fresh lemon (this is optional but really adds some zing).
  3. Crush the hazelnuts in a pestle & mortar (or smash with a rolling pin).
  4. When the porridge is ready top with the blueberry compote and crushed nuts.

never would’ve thought to put mashed banana in the oatmeal rather than on top.. I added chia seeds to the topping – amazing recipe thanks so much!

    Hi, quick question.
Are you using steel cut oats or regular instant oats?

    • Niki on July 19, 2016 at 8:17 pm

      Hi Nabeela
      Either work perfectly here.
      Best wishes
      Niki xx
