You cant beat porridge on a cold winter’s morning and this banana porridge is so good, sweet, sticky and satisfying. I think that cooking the banana with the oats intensifies the delicious banana flavour and works so well with the rich and fruity blueberry compote.
The blueberry compote is really easy to make, I whipped it up while my porridge was cooking (tip – the compote is also delicious with coconut yogurt or as a topping for my banana ice-cream!).
I always like to add a bit of crunch (and protein) to my porridge so I topped it off with crushed hazelnuts.
